Chickened Out

Aren’t you glad tomorrow is Friday? Because I am! :D
But this Saturday will be a super busy day because it’s my brother’s in Law’s wedding. K and I have to go to his place early morning like 6 am to help out with the preparations. Like any typical Chinese wedding, it usually has this “tea ceremony” thing. I’ll make sure to take lots of pictures for you guys and hopefully I can get the post up by Sunday..haha.

I could imagine that we’ll be out for the whole Saturday, from early morning to late night…*sigh* Not sure how I can stay within my Primal/Paleo eats but I’ll try my best.

Anyway, I finally had my last coconut-apple pudding yesterday as my breakfast, along with left over of Quickie Chicken Curry and some nuked frozen green peas.

Try to dress it up a bit for the pic..haha..btw I ate the other 1/2 banana as well

And when I went to Costco after work to pick up some stuff, I bought this: Premium Alaskan Cod Fillets (wild caught)

total 7 individually vacuum sealed fillets

Currently it’s still defrosting in my fridge. Hopefully it’ll be ok by tomorrow morning so I could season them a bit with salt and pepper and cook them for dinner.

After so many chicken dishes, I think I need a little break from it. Fish sounds so good!

Any exciting plans for this coming weekend? Did I tell you that I still have NO IDEA WHAT TO WEAR for the wedding? ARGH! Gotta dig into my closet and improvise whatever clothing I could mix-match. I might want to wear differently during daytime and nightime (daytime would be the tea ceremony, nightime would be the banquet). It’s been pretty cold lately at night, and usually those party dresses are not warm enough!

Primal Stir Fry Chicken

I was hesitating to post this because it’s just super easy that it doesn’t really need its own post.

Primal Stir Fry Chicken
Ingredients:
1 lb boneless skinless chicken breast -cube cut
1/2 white onion -minced
1-2 garlic cloves-minced
1-2 Tbsp coconut aminos
Salt
1/2 tsp white pepper
1 tsp five spice powder
1 Tbps raw honey
1/2 fresh squeezed lemon

Directions:
1. Marinate the chicken with salt, coconut aminos, five spice powder and white pepper for 15 minutes

2. Preheat the skillet with 2 tsp ghee or avocado oil in medium high heat
3. Lightly brown the chicken

3. Mix in the onion and garlic – stir until everything incorporates
4. Add in the honey and lemon juice – season with more salt or coconut amino to taste
5. Serve over the bed of steamed nappa cabbage or any other veggies of your choice

Crispy Taco Chicken

It’s been a while since I used my homemade taco seasonings so I decided to use it to marinate my chicken legs for tonight’s dinner.

Crispy Taco Chicken
Ingredients:
2 Chicken legs
2 Chicken wings
3-4 Tbsp taco seasonings
1-2 tsp salt

Directions:
1. Rub the chicken with the seasonings – make sure to rub seasonings underneath the skins as well – marinate for 4 hours or more (I marinated this in the morning before went to work)

2. Steam the chicken for about 20-25 minutes in high heat (same method as Caramelized Chicken Legs)

3. Preheat the skillet with 2 Tbsp avocado oil

4. Pan seared the chicken in medium high heat until the skin turn crispy

Enjoy over a bed of veggies :D

Quickie Chicken Curry

I made this super simple and fast version of chicken curry couple days ago and it turned out yummy. The whole thing only took about 15 minutes.

Quickie Chicken Curry
Ingredients:
1 lb boneless skinless chicken breast – cube cut
1 garlic clove -minced
1 shallot -minced
1-2 tsp curry powder
1/4 cup to 1/2 cup coconut milk
Salt and pepper to taste
1 green onion stalk -chopped

Directions:
1. Preheat the skillet with 2 tsp ghee or coconut oil
2. Lightly pan fry the chicken breasts – turn over occasionally
3. When the chicken were half cooked (brownish on each side), mix in the minced garlic and shallot – stir until combined
4. Pour in coconut milk, season with salt and pepper accordingly
5. Remove from the heat – topped with green onions
