Quick Post

I had another great workout from Bodyrock.tv and I also made up my own exercise challenge after I finished with Bodyrock.tv workout.

Breakfast/post workout meal – nothing could beat these colorful sweet potatoes and some chicken!

Lunch was yummy Roast Masala Lemon Date Chicken with sliced of whole avocado and steamed veggies, drizzled with Balsamic Vinegar reduction.

And I continued working on my portfolio website, and took me an entire afternoon figuring out how to upload the site using FTP and put up the splash page. I don’t have the entire thing ready as yet, but at least I want to put a placeholder instead of the default page from my hosting.

I took a little break from the computer so I made another beef stew (another type beef stew- will post recipe and think of a better name) and also I made another Egg Loaf Frittata. This time the combo was shredded carrots, shredded sweet potatoes, green onion, seasoned with garlic powder, Red boat fish sauce and some pepper.

Ok now I gotta go back working on my stuff.

Reorganizing

Hi everyone, how’s your Monday going?

Not much going on today, except I finally updated my recipe page. Go take a look when you got a chance :) I added and organize the recipes by categories and subcategories. Hopefully it will make it easier for people to search some specific recipes. I realized I actually have tons of chicken recipes…LOL.

Anyway, my morning was started off with a pre workout snack – one small purple yam before I started my morning workout. Usually I exercise in empty stomach because: I didn’t have time to have pre workout snack unless I got up extra early. But since circumstances had changed, I could take this chance to experiment a bit. I got used to exercise in empty stomach but sometimes I think I got wiped out very quickly. Having a pre workout snack in some form of starch (sweet potaotes) actually helped my performance a bit.

Post workout snack – another purple yam – gosh can’t have enough of this!

Lunch: Easy Tandoori Chicken, pan fried sliced zucchini, sliced of a whole avocado on the bed of spring mix, sprinkled with a lemon wedge- -YUM!

Afternoon snack – big bowl of fruity goodness -cherries and strawberries

That kept me full for the entire day, so my dinner was pretty small.
Bok Choy soup (made from homemade chicken broth)

and a small plate of pan fried sliced zucchini and slices of Cheater’s Shish Kabob Chicken

Savory Sweet Potato Pancakes

I bought 2 huge sweet potatoes last weekend and wanted to try Diane Sanfilippo from Balanced Bites recipe. However, instead of making these as sweets, I opted to make savory versions with my own twist :) I also doubled up her recipes.

Savory Sweet Potato Pancakes (Adapted from Diane Sanfilippo’s Sweet Potato Pancakes)
Ingredients:
1/2 of big sweet potatoes (about 4 cups) – peeled and finely shredded (I used my food procesorr with shredding disc or you can shred them manually)
4 tsp coconut flour
1 tsp salt
1 tsp black pepper
1 Tbsp garlic powder
1/2 cup chopped white onion
Coconut oil
6 eggs

Directions:
1. Lightly add salt, pepper and garlic powder to the shredded sweet potatoes

2. Beat 6 eggs and mix in the coconut flour until everything incorporates
3. Pour in the shredded sweet potatoes into the egg mixture, add in the chopped onions as well

Ok I forgot to add in the onions after I took the pic

4. Melt coconut oil on the skillet in medium heat.
5. Scoop in the batter, make sure they are in similar sizes

6. You can tell if it’s a good time to flip it over when the edges started to look a bit dry

Serve!

This recipe is super easy and very yummy as well. Good for snacks, appetizer or post workout meal.

I Got Bombed!

Happy Tuesday!!

I had a killer workout this morning which left me feeling fantastic because I beat my old score!

Post workout snack – purple sweet potato – GOSH I love this thing!

I’ve been reading a lot about the importance of eating starchy tubers and yams as post workout meal to replenish the depleted muscle glycogen. So now I’m trying to incorporate more into my diet (not just post workout), especially I’m on the quest of adding muscle mass to my skinny frame.

In addition to my packed lunch, I also packed 2 containers of strawberries for my snacks that I got from Farmer’s Market on Saturday.

put some strawberries with fage full fat greek yogurt - yum..taste like strawberry ice cream!

Surprisingly, that little purple yam filled me up all the way to lunch time. In the morning, I was debating whether I should pack some mini egg salsa muffins as my breakfast, but decided not to. Either way, I was well prepared with my strawberries in case I got hungry before lunch time.

Got out from work and I saw this!

For some reason the bird decided to throw its “bombs” all over on my car! How the hell other cars next to me didn’t even get a single drop and I had these nasty droppings on my windshield? And my car was not even parked nearby any trees at all. ARGH! I quickly washed my car after I got home. Can’t stand looking at bird poops on my car. Not to mention it’s harmful for your car paint as well.

Made quickie dinner: roasted curried cauliflower and steamed green beans, some spring mix salad from Costco plus quickie guacamole I made yesterday. (and I had a slice of beef stew – un pictured)

Tomorrow’s lunch (yup just similar stuff with tonight’s dinner and today’s lunch)

How’s the weather at your place?
LA weather has been pretty whacked! The temperature can rise and drop significantly in just one day! Today was very windy and chilly even though it was sunny. And it’s supposedly Spring? It’s more like we’re stepping back to winter again. Not to mention it might rain again tomorrow…argh!
