TGIF!!! Finally the day has come! Anyone has plans this coming weekend?

I will have my annual eye exam tomorrow morning so I can get a new prescription to order my contact lens. My eyes have been pretty stable for the past 3-4 years! So happy with it, despite how many hours I spend in front of computer due to the nature of my job (not to mention at home too!) Hopefully tomorrow’s test result is good!

Btw how did you like my scheduled post? I know it was quite long so I didn’t want to post it right away after that past due date yogurt post.

And I totally agree with you about with the expiration date on food. In some ways they’re just guideline. As long as it hasn’t spoiled then it’s safe to consume (I only talk about whole foods, not the processed ones). In fact, I’m still fine here after consumed that yogurt..hehe.

This morning after my workout, I scrambled around to make Gluten Free Pancakehodgepodge style.

Hodgepodge Gluten Free Pancake (measurements are approximate except the eggs)

Ingredients:
2 small eggs
About 1 cup almond flour/meal (I used left over ground almond and almond waste from my homemade almond milk)
Splash of Blue Diamond Unsweetened Almond Milk
About 1 Tbsp ground flaxseed meal
A dash of salt

The key here is the batter shouldn’t be too runny- it should be thick but not too thick.

Directions:
1. Beat the eggs add in the almond flour, almond meal, flaxseed, milk and salt
2. Heat up the non stick skillet to medium high
3. Melt 1/2 Tbsp butter or oil
4. Pour in the batter (size is up to you – make smaller dollop for small pancake etc)
5. When you saw the batter looks more settled flip it and cook for another minute

Serve!

I loved my b-fast today! The pancake was super yummy and filling! Protein galore!

Speaking of procrastination, I’m kinda guilty in this area. I mentioned a while ago that I need to fix my car bumper after some unlucky incident in December. I‘ve been procrastinating to get another quote from another body shop, aside from the one that the insurance offered me.

Everyday on my way to work, I always pass by a body shop but they are not open until 8:00 am! I usually get to work around 8:00 am just for the parking sake (our workplace has a horrible parking situation long story short).

This morning I purposely left my house a bit later, hoping by the time I passed by the body shop, it’d be exactly 8:00 am. WRONG. It was still about 10 minutes until they were open. So what did I do?

Yup, I passed it and procrastinate….again! *sigh*

Do you have 20/20 vision? If not, do you prefer contacts or glasses? What do you think of laser eye surgery?
I am scared to get laser eye surgery. It’s my eyes we’re talking here. Anything goes wrong, I’ll be blind!! Maybe I’m paranoid, but I don’t want to mess around with my eyes.

Update:
For some reason I was having some sweet cravings so I cut up some banana, sprinkled with pumpkin pie spice and microwaved it for a minute. (inspired by Averie’s 1 minute banana snack – couldn’t find the exact link)

    I wear glasses and contacts and like you, have reservations about getting laser surgery. My grandfather had a botched eye surgery that pretty much ruined his life, so I have seen first hand the devastation of losing your eyesight. However, this is very rare and life is about taking chances. To some, it is worth the risk. To me, I’d rather deal with the lenses.

    I got laser surgery on my eyea 2 years ago, and for me, it was the best thing I could do. I have dry eyes so I couldn’t bear contact lenses (they hurt so much), and wearing glasses made me very nervous and uncomfortable. I hated my glasses, and my lenses as well! The eye doctor said that, 5 years ago, she wouldn’t have recommended lasering, but today it’s much safer so you can’t get blind anymore. (At least this is the case in Germany when you get lasered by a certified eye surgeon, and this is what I did.) The lasering itself is done within a minute, and during the procedure you have around 20 seconds of severe discomfort per eye, but then you’re done and fine. They even gurantee you free re-lasering if the result is below the eyesight you’d have with glasses or lenses, and in my case they did it perfectly in one session, and I have 160 % eyesight now. I’m very happy! The only necessary condition is that your eyes have been stable for at least a year or two before lasering, otherwise they might get worse again. Mine are still fine. 🙂

    Hope your eye exam went well. I’ve been contemplating laser eye surgery for the same reason also. I know the chances are slim that something could go very wrong, but like you said, these are my eyes. Hope you can get the bumper thing estimated soon. Maybe you can call and ask if they do off site estimations, like if they could go to where your car is or something. Hope you’re having a great weekend.
