Can’t Stop Eating…

Unlike yesterday, today I had to broke into my stash for snacks in between meals. Remember the macadamia nuts that I got a while back?

I don’t like to waste food, although I found out the nuts were roasted in yucky safflower/canola oil, I decided to just suck it up and eat it and move on. I’ve been keeping them in my work drawer as my emergency snack. Today I’ve been nibbling on these…so addicting.

And an orange

Got home and made the Savory Sweet Potato Pancakes which turned out SUPER YUMMY and cooked Lamb Baby Ribs the same way I made Crispy Taco Chicken.

Today’s dinner

Sweet potato pancake, baby lamb ribs, K’s Primal Pork Chop (simply marinated in coconut aminos and pan fried :D) served on the bed of Costco’s Spring Mix.

Honestly, the baby lamb ribs were super fatty. A big portion of it was chunk of fat, which sadly I had to toss away. I couldn’t stand biting into a big chunk of fat, no matter how other Primal/Paleo people embrace eating fatty meat. I rather get my healthy fat intake either from avocado or coconut. But I don’t mind eating fatty fish though 😀

Speaking of which, I miss eating fish….darn….why wild caught fishes are so damn pricey??

    I used to snack all the time, because I was hungry all the time, but it got much better with paleo eating. Actually, I don’t like to put something solid into my tummy between meals. Gives and unpleasant feeling. I prefer liquid snack if I get hungry, like protein shakes or tea with almond milk or cream.

    I used to be a crazy snacker too, then I started to do intermittent fasting. I don’t even remember breakfast anymore, and sometimes I even get to dinner (body hasn’t adjusted to that, though).

    Awesome food, keep it up.

    I used to snack all the time before having kids. Now that I have kids and don’t want them picking up my bad habits, I’ve cut down on a lot of snacking. Have a great weekend, Jos.

    Oh my God… can I move next door to you so you can cook for me too? You’re so lucky you can eat nuts too. Dang all you normal people! Just kidding! Lol! ;D

      LOL, I was actually thinking if we live next door, we’d be cooking like crazy -swapping recipes/techniques and be workout buddies. Sorry I didn’t know you’re allergic to nuts (all nuts??)

        Right??? I’d definitely have no problems with living next door to you. Ooh… speaking of which, I’m going to cook the cod fillets tonight. I’m thinking of cutting it in half (cuz there’s a lot) and steaming half with some leeks and ginger and coconut aminos. I was planning on frying the other half using the shredded coconut too! Mmm… fish… 😀 And being workout buddies too? Even better! Not just that but we could probably commiserate about lack of Cantonese skillz with the in-laws. LOL!

        I know… ALL nuts except peanuts (which aren’t nuts anyway). Stupid food allergies really get in the way of me being a foodie. I guess it’s a good thing anyway since all the other “healthy” diets really encourage loading up on nuts as your fat source. ;D

        That still doesn’t mean I’m not secretly intensely jealous of the people who can eat shellfish AND nuts. 😛 ;D
