Monday in a Collage

First of all, THANK YOU for all your sweet comments on my last post! I had lots of fun writing it and glad you all enjoyed it as well! 🙂

Btw I’m going to cut this post short cause I am feeling super tired now, didn’t feel like having dinner (but why my stomach is grumbling now and it’s almost time for me to go to bed…argh!) – Well that’s what happened when I snacked on waaaaaaaaay too much macadamia nuts. And although I had a cooking marathon yesterday, I still had to do some more cooking. I realized I had some chicken meat which I marinated in curry powder and some chopped tomatoes that I didn’t use up for the Hard Boiled Eggs Stew and one bunch of kale. Kale won’t last long and I don’t want to throw it away…it’s pricey! So I made Curried Chicken Kale. Easy sweat.

So in summary, here’s my day in the picture collage.

macadamia nuts dominated my appetite today
Breakfast was “Pumpkin Pie” (mashed yam in yogurt with some pumpkin pie spice)
Lunch was left over from yesterday stuff plus fruits
More macadamia nuts
My Amazon order arrived (coconut oil and coconut flakes) – so snacked on Coconut Flakes as well
And I still haven’t figured out how to use my Ipod touch……yet….

Oh well..g’nite all!

Curried Chicken Kale

Another quick and easy Paleo meal that can be prepared in less than 30 minutes.

1 lb chicken meat – cube cut
A bunch of kale – discard stems
1 vine ripe tomato – chopped
1/2 white onion -chopped
Salt & Pepper to taste
Curry Powder
1/4 cup coconut milk
Coconut oil

1. Marinate chicken meat with salt, pepper and curry powder – set aside for about 15 minutes
2. Melt 1 tsp coconut oil on medium heat – saute the chopped onions until translucent.
3. Add in the chicken meat

4. When the chicken is half cooked, add in the kale and tomatoes – stir until the kale is wilted

5. Pour in the coconut milk, add more curry powder, salt and pepper to taste – adjust accordingly
