Curried Chicken Kale

Another quick and easy Paleo meal that can be prepared in less than 30 minutes.

Ingredients:
1 lb chicken meat – cube cut
A bunch of kale – discard stems
1 vine ripe tomato – chopped
1/2 white onion -chopped
Salt & Pepper to taste
Curry Powder
1/4 cup coconut milk
Coconut oil

Directions:
1. Marinate chicken meat with salt, pepper and curry powder – set aside for about 15 minutes
2. Melt 1 tsp coconut oil on medium heat – saute the chopped onions until translucent.
3. Add in the chicken meat

4. When the chicken is half cooked, add in the kale and tomatoes – stir until the kale is wilted

5. Pour in the coconut milk, add more curry powder, salt and pepper to taste – adjust accordingly

    Myam, this looks so good again! I haven’t used curry powder in ages, need to change that! 🙂
